How To Make It

  1. Cut the sticks. Cut 4 slices of bread into sticks.
  2. Make the egg wash. Whisk together the egg whites, monk fruit, vanilla, peanut butter emulsion, and cinnamon.
  3. Soak. Soak the sticks in the egg wash.
  4. Air fry. Lay the sticks on parchment paper and air fry at 400°F for 18–22 minutes, until crispy. Flip halfway and spray the tops with cooking spray.
  5. Make the Reese’s sauce. Mix the PBfit, monk fruit, and 1/4 packet of sugar-free chocolate pudding. Loosen with a splash of water until it’s a smooth, drizzle-able sauce.
  6. Make the topping. Set out 2 servings of monk fruit syrup and a heavy dusting of stevia confectioners sugar.
  7. Finish. Drizzle the Reese’s sauce over the sticks — or do it my way and dunk each stick in the Reese’s sauce and then the syrup.

Neil's Note

Peanut butter in the egg wash and in the sauce is what gets you that real Reese’s flavor. The PBfit and egg whites are doing the protein work — 49 grams in something that eats like a dessert. Air fry them until they’re actually crispy; soggy sticks ruin it. And the dunk method beats the drizzle every time — get some Reese’s sauce and some syrup on every single bite.
