Peanut Butter Buckeyes

Chocolate-covered peanut butter buckeyes that taste like the candy-store version, at 90 calories and 7 grams of protein each. The peanut butter powder does the protein work, and swapping in Lily’s chocolate chips keeps the sugar and calories down without losing the chocolate. Makes 16.

How To Make It
- Make the filling. Mix the peanut butter powder, Swerve confectioners, salt, and water into a smooth, moldable dough. Add the water gradually — you want it firm enough to roll, not sticky. If it’s too sticky, work in a little more peanut butter powder; if it’s too firm, add a dash of water. Keep it to tiny amounts until the dough comes together.
- Roll and chill. Roll the dough into 1-inch balls, set them on parchment, and freeze 15–20 minutes so they firm up (this makes dipping way easier).
- Melt the chocolate. Melt the Lily’s chocolate chips in the microwave in short bursts, stirring between each. Stir in the cayenne now if you’re using it.
- Dip. Using a toothpick, dip each chilled ball into the chocolate, leaving a small circle of peanut butter showing on top — that’s the classic buckeye look.
- Set. Return to the parchment and chill until the chocolate hardens.

The whole trick here is the peanut butter powder — that’s where the 7 grams of protein per buckeye comes from, with almost none of the fat of real peanut butter.
