How To Make It
- Scramble the eggs. Scramble the 2 eggs together with the 1/2 cup of egg whites.
- Cook the potatoes. Season the 2 oz of potatoes with salt, pepper, garlic, onion, and smoked paprika, and cook until tender.
- Cook the sausage. Cook the 2 turkey sausage patties.
- Build it. Fill the tortilla with the eggs, potatoes, sausage, and the slice of cheese.
- Wrap and crisp. Wrap and seal the burrito, then crisp it on a hot pan until golden.
- Make the sauce. Stir together the monk fruit syrup, sriracha, and cinnamon.
- Dunk. Dunk each bite into the sauce.
Neil's Note
The sauce is what makes this one — maple sweetness, cinnamon warmth, and a hit of sriracha heat. Sweet and spicy on a savory breakfast burrito hits different. Crisping the burrito on the pan gives you that golden, crunchy shell instead of a soft wrap. Between the eggs, the turkey sausage, and a low-carb wrap, you’re at 49 grams of protein before you even touch the dip.
