Cinnamon Roll Protein Bake

A single-serve cinnamon roll protein bake: soft cinnamon-sugar dough with globs of cinnamon butter baked right in, finished with a cream cheese icing. 368 calories and 37.5 grams of protein for the whole thing — and no rolling dough required.

How To Make It

  1. Make the dough. Mix all the dough ingredients together into a smooth batter.
  2. Pan it. Spread the batter into a small greased baking dish.
  3. Add the cinnamon butter. Mix the cinnamon, light margarine, and brown Monkfruit together, then drop globs of it over the top of the batter — that’s your cinnamon swirl, no rolling needed.
  4. Bake at 350°F for 25–30 minutes, until set and springy on top.
  5. Cool 20 minutes. Let it fully cool before icing — rush this and the icing just melts and runs off.
  6. Ice it. Mix the cream cheese, powdered Monkfruit, and a splash of almond milk until smooth, then spread it over the top.

Neil's Note

This is the whole cinnamon-roll experience in a single-serve bake — and 37.5 grams of protein. The trick that makes it easy is the cinnamon butter: instead of rolling and layering dough, you just drop globs of it over the batter and let it melt into a swirl as it bakes.
