Girl Scout Thin Mints folded into creamy mint protein ice cream — 38 grams of protein in the whole pint.

A high-protein Ninja Creami that tastes like a box of Thin Mints turned into ice cream: a real-vanilla mint base spun creamy, then mixed with actual Thin Mint cookies and a drizzle of chocolate syrup on top. 400 calories and 38 grams of protein for the entire pint.

The Base (mix dry first)

How To Make It

  1. Mix the dry ingredients in the pint. Add the scoop of vanilla whey, a pinch of salt, 0.5g xanthan gum, and 4 tbsp monk fruit / erythritol blend. Mix the dry ingredients together first — this keeps the xanthan gum from clumping.
  2. Add the wet. Pour in 240ml Fairlife low-fat ultra-filtered milk, 100ml unsweetened vanilla almond milk, 1/8 tsp peppermint emulsion (skip it if you're not a mint fan — the cookies add enough on their own), and 1 tsp vanilla bean paste for a real-vanilla ice cream feel.
  3. Blend. Immersion blend for a full 90 seconds — don't skip this. The xanthan gum needs to be blended thoroughly for a true ice cream feel.
  4. Freeze. Freeze for 24 hours.
  5. Spin. Run the pint under warm water for 60 seconds, then spin on the Lite Ice Cream setting.
  6. Mix in. Bore a hole OFF-CENTER (this lets the blade pass without pulverizing your cookies into dust) and add 4 Thin Mint cookies. Run the Mix-In setting.
  7. Top it. Finish with 1 more Thin Mint cookie and a drizzle of Hershey's simple or sugar-free chocolate syrup, then enjoy.

Neil's Note

Two things make this one: the vanilla bean paste gives the base a real-ice-cream taste with actual vanilla beans in it, and boring the hole OFF-CENTER keeps the Thin Mints in real cookie pieces instead of dust. The peppermint emulsion is optional — the cookies bring their own mint, so start without it if you want it subtle. 38 grams of protein in a whole pint of Thin Mint ice cream.
