How To Make It
- Brine the chicken. Cube it, cover in dill pickle juice, and let it sit at least 30 minutes — a few hours is better, overnight is best. This is the whole recipe. It’s the real Chick-fil-A flavor and it costs nothing.
- Double dredge for a real coating. Drain and pat the chicken bone dry. Dredge in flour, then egg whites, then the flour-cornstarch-stevia-seasoning mix. Press it on, don’t just toss — then let the nuggets rest 5 minutes so the crust sets.
- Air fry the nuggets. 400°F, single layer, not touching. Spray the tops with oil. 8–10 minutes, flip halfway, and spray again. That second spray is what makes them golden instead of pale and floury.
- The fries. Cut a russet into fries, soak in ice water 20 minutes, then pat completely dry. Spray and season, then air fry at 380°F for 15–18 minutes, shaking twice.
- The sauce. Whisk everything together. It’s honey mustard + BBQ + mayo, cut with Greek yogurt — the exact Chick-fil-A sauce at a fraction of the calories.
Neil's Note
The two things everyone gets wrong: they skip the brine, so it tastes like plain chicken, and they do a single dredge, so the coating slides off. Pickle juice and a double dredge fix both. And the stevia powdered sugar is the little detail that mimics Chick-fil-A’s signature sweet breading — without adding a single calorie.
