The Big Mac

The real McDonald's Big Mac: ~590 calories, 25g protein.

Fewer calories, nearly double the protein — and I eat one almost every single day at under 10% body fat. The burger isn't the point though. The sauce is. That's the part everyone gets wrong, and it's the reason this never feels like diet food.

The Burger

The Sauce — The Whole Game

Fat-free Greek yogurt — the base, and the upgrade nobody does3 tbsp
Light mayo1 tbsp
Sugar-free ketchup1 tbsp
Yellow mustard2 tbsp
Spicy pickle juice (I use Wickles) — trick #11 tbsp
Smoked paprika — trick #21/4 tsp
Apple cider vinegar3 tsp
Sweet relish2 tbsp

How To Make It

  1. Whisk every sauce ingredient together and let it sit at least 10 minutes. It gets better as it sits.
  2. Mix the beef with dehydrated onion and Worcestershire. Form two thin patties — thin is the trick, two patties feels like far more food.
  3. High heat, about a minute per side. Lay the cheese on for the last 30 seconds.
  4. Toast the bun, sauce it heavy, stack the patties with pickles, and sauce it again.

Neil's Note

Why there's ketchup in it: a real Big Mac sauce has none, and I got roasted for this in the comments. But fat-free Greek yogurt is tart — almost bitter — so the ketchup's sweetness cuts straight through it. With the pickle juice and apple cider vinegar in there too, it balances perfectly. The smoked paprika is what gives it that yellowish Big Mac color.

The two tricks I found by accident: spicy pickle juice (Wickles) instead of regular, and smoked paprika instead of plain. Together they give the sauce a zesty, punchy flavor that's honestly better than the original.

Make a big batch. This recipe makes about 20 times what you'd get in a McDonald's packet — and it's all inside the 482 calories. Keep it in a squeeze bottle in the fridge. It's incredible on tacos too.
