Oreo Cheesecake Cupcakes

A cookies-and-cream cupcake with a cheesecake frosting — and 19 grams of protein instead of a sugar crash.

A vanilla protein cupcake, filled and topped with a whipped Oreo cheesecake frosting. 143 calories and 19 grams of protein each — makes 6 cupcakes. Heads up: the frosting recipe makes a big batch (about 16 servings), so you’ll have plenty left over to use on anything.

The Oreo Cheesecake Frosting

Makes a big batch (~16 servings) — enough to fill and top all 6 with plenty left over.

How To Make It

  1. Make the batter. Mix all the cupcake ingredients together into a smooth batter and divide evenly into a 6-cup muffin tin (greased or lined).
  2. Bake at 350°F for 15–18 minutes, until they spring back when you touch the top. Let them cool completely before frosting.
  3. Make the frosting. Add everything except the Oreos to a food processor and blend on low until smooth, scraping the sides as needed. Then crush the Oreo Thins and stir them in by hand.
  4. Fill them. Bore a small hole in the side of each cooled cupcake with a corkscrew, then pipe frosting inside. Use a piping bag — or a ziplock bag with the tip cut off.
  5. Frost the tops. Pipe the rest of the frosting over the top of each cupcake. Save the leftover frosting for later.

Neil's Note

The frosting makes way more than 6 cupcakes need — that’s on purpose. It’s a whipped Oreo cheesecake at 41 calories and 6 grams of protein per 2 tablespoons, so keep the extra in the fridge and put it on everything: pancakes, waffles, a spoon. No piping bag? A ziplock with a corner snipped works just as well. And boring a hole in the side to fill them is what turns a good cupcake into a "how is this only 143 calories" cupcake.
