Nacho Chicken Finger Crunchwrap
506 CAL | 67G PROTEIN (PER CRUNCHWRAP)Crispy chicken fingers smothered in high-protein nacho cheese, folded and seared — 67 grams of protein.
Crispy air-fried chicken fingers wrapped up crunchwrap-style, smothered in a high-protein nacho cheese, seared till golden, and dunked in more of that cheese. 506 calories and 67 grams of protein — that ratio is unreal for something that eats like a Taco Bell run.
The Chicken Fingers
| Ingredient | Amount |
|---|---|
| Chicken breast, diced into 1-inch cubes — 185 cal / 39g protein per 6 oz cooked | 6 oz per wrap |
| Egg whites (to dunk) — 35 cal / 6g protein | 1/4 cup |
| Breadcrumbs (your choice) — 100 cal / 2g protein | 1/2 cup |
| Garlic powder | 1 tbsp |
| Onion powder | 1 tbsp |
| Smoked paprika | 2 tsp |
| Salt & pepper | to taste |
That breading (¼ cup egg whites + ½ cup breadcrumbs = 135 cal / 8g protein) coats about 16 oz of chicken. Each wrap uses 6 oz, so about 51 cal / 3g of breading per wrap — already counted in the per-crunchwrap total below.
The Nacho Cheese Sauce (batch)
| Ingredient | Amount |
|---|---|
| Evaporated milk — 134 cal / 7g protein | 100 ml |
| Reduced-fat Mexican blend cheese — 320 cal / 32g protein | 112 g |
| Hot sauce (Frank's) — 0 cal | 30 ml |
| Whole sauce batch | 454 · 39g |
Per Crunchwrap
| Ingredient | Cal / Protein |
|---|---|
| Large low-carb tortilla | 100 · 10g |
| Chicken (6 oz) | 185 · 39g |
| Breading (per-wrap portion) | 51 · 3g |
| Nacho cheese sauce (2–3 oz, poured on top) | 110 · 9g |
| Small circle cut from a low-carb wrap | 60 · 6g |
| Per crunchwrap | 506 · 67g |
Plus extra nacho cheese for dunking, from the leftover batch — to taste.
How To Make It
- Bread the chicken. Dice the chicken breast into 1-inch cubes. Dunk them in 1/4 cup egg whites, then drop them in a ziplock bag with the 1/2 cup breadcrumbs, garlic powder, onion powder, smoked paprika, and salt & pepper, and shake to coat.
- Air fry. Lay the chicken on a sprayed tray, spray the tops, and air fry at 400°F for 8–12 minutes.
- Make the nacho cheese. In a pan over low heat, warm the 100 ml evaporated milk, then add the 112 g reduced-fat Mexican cheese and stir until fully melted. Stir in the 30 ml hot sauce.
- Build it. On a large low-carb tortilla, pile 6 oz of chicken in the center, pour 2–3 oz of nacho cheese over the top, and lay a small circle cut from a low-carb wrap over the chicken.
- Fold & sear. Fold it up crunchwrap-style (like a Taco Bell brunch wrap) and sear both sides until golden and crispy.
- Dunk. Dunk it into the leftover nacho cheese sauce and go.
Neil's Note
The whole trick is the cheese sauce — evaporated milk plus reduced-fat Mexican cheese gives you a rich, melty nacho sauce that's loaded with protein instead of just fat. Air-frying the chicken instead of deep-frying keeps it crispy without the calorie bomb, and searing the folded wrap is what gets you that crunch. 67 grams of protein in one wrap — and it tastes like a drive-thru.
