Crispy air-fried chicken fingers wrapped up crunchwrap-style, smothered in a high-protein nacho cheese, seared till golden, and dunked in more of that cheese. 506 calories and 67 grams of protein — that ratio is unreal for something that eats like a Taco Bell run.

How To Make It

  1. Bread the chicken. Dice the chicken breast into 1-inch cubes. Dunk them in 1/4 cup egg whites, then drop them in a ziplock bag with the 1/2 cup breadcrumbs, garlic powder, onion powder, smoked paprika, and salt & pepper, and shake to coat.
  2. Air fry. Lay the chicken on a sprayed tray, spray the tops, and air fry at 400°F for 8–12 minutes.
  3. Make the nacho cheese. In a pan over low heat, warm the 100 ml evaporated milk, then add the 112 g reduced-fat Mexican cheese and stir until fully melted. Stir in the 30 ml hot sauce.
  4. Build it. On a large low-carb tortilla, pile 6 oz of chicken in the center, pour 2–3 oz of nacho cheese over the top, and lay a small circle cut from a low-carb wrap over the chicken.
  5. Fold & sear. Fold it up crunchwrap-style (like a Taco Bell brunch wrap) and sear both sides until golden and crispy.
  6. Dunk. Dunk it into the leftover nacho cheese sauce and go.

Neil's Note

The whole trick is the cheese sauce — evaporated milk plus reduced-fat Mexican cheese gives you a rich, melty nacho sauce that's loaded with protein instead of just fat. Air-frying the chicken instead of deep-frying keeps it crispy without the calorie bomb, and searing the folded wrap is what gets you that crunch. 67 grams of protein in one wrap — and it tastes like a drive-thru.
